Morning Muffins

Dear Sis,

This morning I made muffins for the month of October.  Josh has a bowl of cereal each morning for breakfast, so I’m back to my pre-marital routine of a grain free muffin with my morning fruit and eggs, which is almost as fast as his cereal.  I made the two you like best… Banana Nut and Blueberry Chia.  I’ve included the recipes in case you’d like to try them sometime.

Banana Nut Muffins

 

Paleo Banana Nut Muffins

Ingredients
  1. 2 bananas, pureed
  2. 6 eggs, beaten
  3. 1/3 c coconut oil, melted
  4. 1/4 c maple syrup
  5. 1 t vanilla
  6. 1/4 t pumpkin pie spice
  7. 1/4 t salt
  8. 1/2 t baking soda
  9. 1/2 c coconut flour
  10. 1 c walnuts, crushed
Instructions
  1. Preheat oven to 375. Line 15 muffin cups with parchment liners.
  2. Whisk together bananas, eggs, oil, syrup, and vanilla.
  3. Stir in dry ingredients. Fold in nuts. Stand until thickened.
  4. Spoon into lined muffin cups. Bake 15-18 minutes.

Blueberry Chia Muffins

Paleo Blueberry Chia Muffins

Ingredients
  1. 1 c almond milk
  2. 1/2 c + 2 T honey
  3. 6 eggs, beaten
  4. 1/4 c coconut oil, melted
  5. 1 T vanilla
  6. 1/2 t salt
  7. 1 t baking soda
  8. 1 c coconut flour
  9. 1/4 c chia seeds
  10. 1 c blueberries
Instructions
  1. Preheat oven to 350. Line 20 muffin cups with parchment liners.
  2. Whisk together milk, honey, eggs, oil, and vanilla.
  3. Stir in dry ingredients. Fold in seeds and berries. Stand until thickened.
  4. Spoon into lined muffin cups. Bake 20 minutes.
