Dear Sis,

Tonight we had a celebratory dinner to kick-off all the big and exciting changes: the big move and my new job as a nanny. It will probably be a last home cooked meal for a few weeks. Sorry, but the post I make tonight will probably be the last for the next week or two. …maybe longer:(

Ingredients
  1. 4 Lipton natural tea bags
  2. 4 c water, boiling
  3. 4 c cranberry juice
  4. 1/4 c maple syrup
Instructions
  1. Step tea in hot water, 5 minutes. Remove tea bags.
  2. Add tea to a pitcher with remaining ingredients. Chill.
Notes
  1. Makes 2 quarts.

Chessy Pesto Stuffed Baked Chicken

Ingredients
  1. 4 chicken breasts, pounded out
  2. 1/3 c mozzarella, shredded
  3. 1/3 c pesto sauce
  4. 3 T sour cream
  5. Italian bread crumbs
  6. 1 egg, beaten
Instructions
  1. Combine cheese, pesto, and sour cream. Spread over pounded chicken breasts. Tuck and roll each chicken breast around filling. Secure with toothpicks as needed.
  2. Preheat oven to 350.
  3. Coat each stuffed chicken in bread crumbs, egg, and a second coating of bread crumbs.
  4. Arrange in a square baking dish. Bake 25 - 25 minutes.

Ingredients
  1. 3/4 c orzo pasta
  2. 1 c frozen sweet peas
  3. 1/2 c fresh asparagus, chopped
  4. 2/3 c Parmesan, shredded
  5. 1 T butter or ghee
  6. 1/3 c heavy cream
  7. salt and pepper
Instructions
  1. Bring a saucepan of water to a boil. Boil pasta 5 minutes.
  2. Add peas and asparagus and cook 5 minutes more. Drain.
  3. Stir in cheese and butter until melted.
  4. Stir in cream. Season with salt and pepper to taste.

A perfect pair for Cheesy Pesto Stuffed Chicken!

Brownie Butter Cake

Brownie Butter Cake

Preheat oven to 350. Grease and flour a loaf pan.

Brownie: In a saucepan over medium-low heat, melt together 1/2 c + 1/3 c dark chocolate chips and 1/4 c unsalted butter, until smooth. Remove from heat. Stir in 1/4 c brown sugar. Beat in an egg and 1/4 c flour. Pour into prepared pan. Bake 15 minutes.

Butter Cake:  Beat 1 c sugar and 1/2 c soft unsalted butter until fluffy. Beat in 2 eggs, one at a time. Stir in 1/4 t baking power, 3 T milk, and 1 c flour. Pour over brownie layer. Return to the oven 30 – 40 minutes. Makes 1 loaf.

We ate so much chicken and pasta, we barely touched our cake, but the few bites we did eat were yummy:)

A Quilt for Mom

Dear Sis,

I finally completed the pattern, cut all the pieces, and have a good start on Mom’s birthday quilt. I think the stars with go nicely with the eyelet diamonds of the afghan:)

Design

The pattern incorporates the 9 patch block and the star.

Here is the first complete block:)

Star Block

I learned a new trick to create half triangle squares more efficiently. This chart tells you what size squares to cut.

Magic-8 Chart

Place to squares with right-sides facing. Press in half diagonally.

Step 1

Press into quarters diagonally.

Step 2

Open and stitch 2 seams for each fold, 1/4 inch away from crease.

Step 3

Cut in into squares.

Step 4

Step 5

Cut into half square triangles.

Step 6

This method saves loads of time and headache. Share it with all your quilting friends!

Cheeseburger Soup & Biscuits

Dear Sis,

We had a yummy supper last night. I found way to make homemade bread without overwhelming us. A half dozen of biscuits is perfect!

Cheeseburger Soup

Brown 1 lb. ground beef, in a heavy stock pot, with a chopped onion and 1 T ghee.

Add dice 2 stalks celery, 4 chopped carrots, and 1.5 lb. diced new potatoes.  Stir in 3 c chicken stock, 1 t ea. basil and parsley, and 1/2 t ea. pepper and salt. Cover and simmer until vegetables is desired tenderness.

Make a roux with 3 T e. ghee and flour. Gradually beat in 1 1/2 c milk.  Stir in 1/4 c sour cream and 2 c shredded cheddar cheese until smooth. Stir into stew. Bring to a simmer. Remove from heat.

Serves 10. Garnish with additional shredded cheddar.

Josh is fully enjoying this soup, even as leftovers. I don’t know it the name has anything to do with it, but he really likes this soup. Source Recipe: Cheeseburger Soup | The Recipe Critic

Yogurt Biscuits

1/2 Dozen Greek Yogurt Biscuits

Cut 1/2 c Greek yogurt into a blend 1 c flour, 1 1/2 t baking powder, 1 t sugar, and 1/4 t salt.  Stir in 1/4 c milk.

Preheat oven to 425. Press out dough on a floured surface. Cut 1/2 dozen – 3 inch biscuits. Arrange on a baking sheet. Bake 10 – 15 minutes. Serve warm rolls wrapped in a cloth.

This year is Mom’s big birthday… 50! I’ve decided to make her a new bedding set. Although her birthday is not until the end of September, I want to have enough time to get everything just right.

The afghan pattern has been a few weeks in the making.

Row 10: With right side facing, ch 3, dc, in 3 ch space of a corner. Dc in each stitch across. 2 dc, ch 3, 2 dc, in next corner. Dc in each stitch across. 2 dc in 3 ch space of a corner. Bind off.

Row 11: With right side facing, ch 3, dc, in each stitch across. 2 dc, ch 3, 2 dc, in corner. Dc in each stitch across. Bind off.

Row 12 – 23: Repeat Row 11.

Round 24: With right side facing, ch 3, dc, in 3 ch space of corner. Dc in each stitch across. 2 dc, ch 3, 2 dc, in next corner. Dc in each stitch across. Ch 3,  place 2 dc in the side of each dc from Row 10 – 23, dc in each stitch across. 2 dc, ch 3, 2 dc, in 3 ch space of corner. Dc in each stitch across, 2 dc in the side of each dc from Row 10 – 23, ch 3, join with a sl st in top of first 3 ch.

Make 24 squares. Assemble as depicted in the chart.

Ingredients
  1. 1 (12 oz pkg.) Lo Mein pasta, cook
  2. 1/2 c carrot, diced
  3. 1/2 c mushroom, diced
  4. 1/4 c celery, diced
  5. 3 T sesame oil
  6. 1/4 c soy sauce
  7. 2 T brown sugar
  8. 1 T ginger paste
Instructions
  1. Sauté vegetables in oil in a saute pan or wok.
  2. Stir in soy sauce, sugar, and ginger.
  3. Add pasta and stir until heated though.
Notes
  1. Serves 8 as a side or 4 as an entree.

Gallery Wall Reveal

Dear Sis,

Sadly, the photographs do not do the result justice. I didn’t want to post a picture of a reflection of myself taking a picture of the gallery wall. This is the best I could capture it. You’ll have to take my word for it… maybe it is just because it has been months in the making, but the gallery wall is wonderful!

When Josh came home from work, he barely noticed it as he started tying up some loose ends from the day. I said, “I can’t stop staring at the wall,” all dreamy like. He paused from his work email and glanced up at me and said, “It’s okay sweety. Sometimes I stare at walls too.” The look of concern made his joke that much funnier!

French Bread Pizza for my Valentine

Dear Sis,

We are still having Valentines Day fun!

Today I made french bread pizza with heart shaped pepperoni.

Preheat oven to 350.

Slice a baguette lengthwise and into sections. Spread with tomato sauce. Sprinkle shredded mozzarella cheese and turkey pepperoni.

Bake 10 – 15 minutes.

Easy & Delicious!
