Southern Caramel Peach Puddin’

warm moist cake-y peach pudding with caramel sauce melding with vanilla ice cream

Pudding
  1. 2 c diced peaches, thawed & drained
  2. 1 c flour
  3. 1/2 c milk
  4. 1/3 c sugar
  5. 2 t baking powder
  6. 1/2 t cinnamon
  7. 1/2 t salt
caramel topping
  1. 1 c warm water
  2. 1/3 c brown sugar
  3. 1/3 c sugar
  4. 1 T ghee or butter
  5. dash of nutmeg
Instructions
  1. Preheat oven to 450. Grease a square baking dish.
  2. Pudding: Combine peaches and dry ingredients. Stir in milk. Pour into prepared dish.
  3. Caramel Topping: Combine all ingredients. Stir until ghee melts. Pour over pudding.
  4. Bake 30 minutes. Serve warm with vanilla ice cream.

Sugar Cookie Mix

Ingredients
  1. 1 quart jar
  2. 2 1/2 c + 2 T flour
  3. 1 1/2 c sugar
  4. 1 T baking powder
  5. 1 t almond extract
Instructions
  1. Stir together all four ingredients. Place in quart jar. Label and gift with remaining instructions.
  2. Place Sugar Cookie Mix in the work bowl of a stand mixer or food processor. Cut in 3/4 c soft unsalted butter and 3 eggs until dough forms a ball. Wrap in plastic and chill.
  3. Preheat oven to 375. Roll dough to 1/4 inch thickness on a floured surface. Cut out and place shapes on baking sheets. Sprinkle with colored sugar if desired. Bake 8-10 min. Cool on wire racks.
Notes
  1. To avoid dough getting tougher, dryer, and less sweet, as it is rerolled, floured surface with a 50/50 blend of flour and powdered sugar.

Dear Sis,

Our blog has it’s very own domain! Now things will always be up and running!!!

Our First beginning:

You introduced us to blogging in 2013 with the short-lived Barnyard Biddy using blogspot.com.

Our Second beginning:

We started our second blog together in 2014, just after I got married to Josh and moved nearly 1,500 miles away. As we hopped Tag Sis, You’re It! powered by blog.com, helped keep our relationship strong despite the distance.

Our Third beginning:

After technical difficulties that grounded blog.com for over two weeks, we decided it was time to blog independently!

So here goes…

Birthday Board

Dear Sis,

I’ve been thinking about making a birthday board since the first moment I stumbled upon the idea while pursuing Pinterest. My new life in Texas does not include a woodworking shop of the ground floor, so I bought my customized board on Etsy from SweetCarolineCompany.

Because our family is so large, I ordered an additional 50 disks to supplement the 24 included with my board purchase. I also ordered a heart, so I could feature our anniversary.

After a long morning of painting disks, here is my finished birthday board:

Tortellini Casserole

Dear Sis,

My new toaster oven arrived today! Just in time for Tortellini Casserole and Garlic Bread Day. Now we don’t have to heat up the oven just to make garlic bread for two:) And, I don’t have to fuss with the silly toaster that used to be part of Josh’s bachelor pad!

Ingredients
  1. 2 c mozzarella, shredded
  2. 1 (14.5 oz can) seasoned diced tomatoes
  3. 1 (12 oz pkg.) chicken sausage, diced
  4. 1 1/2 c tomato sauce
  5. 1 (9 oz pkg.) fresh cheese tortellini
  6. 1 small onion, diced
  7. 1 T garlic, minced
  8. 1 T olive oil
Instructions
  1. Preheat oven to 350.
  2. Sauté onion and garlic in oil, over med heat, until soft.
  3. Add diced sausage and brown as desired.
  4. Stir in diced tomatoes and tomato sauce.
  5. Add tortellini to a 9x13 dish. Top with sauce and 1/2 shredded cheese. Stir until well combined.
  6. Sprinkle with remaining cheese. Cover with foil. Bake 30 minutes.
Notes
  1. Goes well with side salads and garlic bread, for a more complete meal.
