Cherry Chocolate Chip Muffins

Dear Sis,

Muffins are the new big thing with the littles! I guess we have finally graduated from pancakes:)

Ingredients
  1. 1 c granulated sugar
  2. 1/4 c unsalted butter, soft
  3. 1/2 c milk
  4. 2 eggs
  5. 1 t vanilla
  6. 2 c unbleached flour
  7. 2 t baking powder
  8. 1/2 t salt
  9. 2 c cherries, pitted & chopped
  10. 1/2 c milk chocolate chips
Instructions
  1. Preheat oven to 350. Line 1 dozen muffin cups with parchment liners.
  2. Cream together sugar and butter. Beat in milk, eggs, and vanilla.
  3. Combine dry ingredient in another bowl. stir wet mixture into dry ingredients, taking care not to over stir.
  4. Fold in berries and chocolate chips. Spoon batter into prepared muffin liners. Bake 20 - 25 minutes.
Notes
  1. Fresh or Frozen cherries can be used. If the berries are not thawed, it will increase baking time slightly.

Snack Snacking on a Rat

Dear Sis,

I witnessed this pretty amazing event in our front yard. It wasn’t so hard to see in person. Sadly, these photos are a bit of a “Where’s Waldo.” 

Can you find the snack squeezing the gray rat?

This last shot was a gamble on my part. I got closer to take a side shot.  For the first time, the snack noticed my presence. He froze, and I decided to leave and give him some space. I wouldn’t be able to swallow a cheeseburger whole with an audience!

New Anniversary Cake

Dear Sis,

Josh picked up a new anniversary cake for us yesterday on his way home from work. The name of the chain is punny:)

After lunch today, we cut the cake together and enjoyed a proper anniversary cake, that hasn’t been frozen, thawed, and refrozen a half dozen time and doesn’t have a cross-country travel history.

Almond Butter Cups

This morning I was struck by a chocolate craving and was modified to discover that we were fresh out of chocolates!

Chocolate
  1. 1/3 c cocoa powder
  2. 1/3 c butter or ghee, melted
  3. 1/3 c maple syrup
Almond Butter
  1. 3/4 c almond butter
  2. 2 T butter or ghee, melted
  3. 2 T maple syrup
  4. coarse salt
Instructions
  1. Line 2 dozen mini muffin cups with parchment liners.
  2. Cream together cocoa powder, 1/3 c melted ghee, and 1/3 c maple syrup. Spoon 1 t chocolate mixture into each liner. Freeze to set.
  3. Meanwhile, beat together almond butter and remaining 2 T melted ghee and maple syrup. Spoon 1 T almond butter into each liner. Press down. Freeze to set.
  4. Remelt chocolate in the microwave and spoon 1 t chocolate mixture into each liner. Top each almond butter cup with a few grains of coarse salt. Freeze to set.
Notes
  1. Store in the freezer.

Blueberry Apple Pie Filling

Sis,

Made some Apple Blueberry Pie filling today.  Boy, is this stuff good!  Thinking I may actually like it better then the Apple Pie filling recipe.

I have been having a bit of fun with the clear jell.  You do not have to add much sugar for this stuff to work, so I think I will use it for jams and jellies too.  You do have to leave more head room in the jar though.  Most recipes for pie filling say leave 1″ of head space…but, have pictures where there is actually more then 1″ of head space.  I leave 1 1/4″, or my filling volcanoes out of the jars, when I remove them from the water bath.

Ingredients
  1. 5 1/2 Quarts Apples (peeled, cored, and chopped)
  2. 2 Quart Blueberries
  3. 1 1/2 Cups White Sugar
  4. 1 1/2 Cups Light Brown Sugar
  5. 1 Tablespoon Allspice
  6. 1 Teaspoon Ginger
  7. 1 Teaspoon Almond Extract
  8. 6 Cups Apple Water
  9. 1 Cup Blueberry Water
  10. 3/4 Cup Lemon Juice
  11. 1 Cup Clear Jell
Instructions
  1. Process 8 quart jars, lids, and bands in a hot water bath 10 minutes to sterilize.
  2. Blanch chopped apples until nearly tender. Remove apples from water and keep warm.
  3. Cook down berries until juice seeps out. Remove blueberries from juice and stir into apples.
  4. Combine 6c blanching water. 1c blueberry juice, lemon juice, sugar, extract, and spices; stirring until sugar dissolves. Bring to a simmer.
  5. Whisk Clear Jell into spiced syrup mixture; stirring until dissolved and thickened.
  6. Place warm fruit into jars and ladle in syrup. Poke and stir with spoon to remove air pockets and distribute filling. Take care not to pack down the apples tightly. Leave 1 1/4 inch headspace, as filling expands during processing. Wipe rims and place lids and bands finger tight.
  7. Place in water bath, and boil for period recommended for your elevation.
Notes
  1. Makes 6-7 quart jars. Stand 24 hours without disturbance. Label and date contents. Store and a dark dry location up to one year. Refrigerate up to two weeks after opening.
