Christmas in July

Dear Sis,

Today I assembled some fun gifts for sewing club. I’m sure the ladies will love these!  What woman would say no to a chocolate bar and fuzzy socks dressed up as a snowman.

Baby has me making holiday preparations super early this year.  I’m pretty sure I’ll be too busy with a one month old to care about this stuff when the time comes:)

Cherry Almond Bars

Dear Sis,

Baby-body loves carbs, but not an excess of wheat, so I’ve been looking for recipes with alternative flours. This is a winner!

Cherry Almond Bars

Cherry Almond Bars

Crust & Crumble
  1. 3/4 c almond meal
  2. 3/4 c unbleached flour
  3. 1/2 c sugar
  4. 1/2 t baking powder
  5. 1/4 t salt
  6. 1 egg yolk
  7. 1 t almond extract
  8. 1 t vanilla extract
  9. 1/2 c cold unsalted butter, cubed
Cherry Layer
  1. 2 c fresh cherries, halved & pitted
  2. 3 T sugar
  3. 2 t cornstarch
  4. 2 t water
Instructions
  1. Preheat oven to 375. Grease an 8x8 pan and line with parchment.
  2. Combine dry ingredients. Stir in egg and extracts. Cut in butter until crumbly.
  3. Press 2/3 mixture into prepared pan to make crust.
  4. Toss together cherry layer ingredients and spread over crust.
  5. Scatter bits of remaining dough over cherry layer. Bake 35 minutes until lightly browned.

Baby-body likes oats! So I made an old pre-married-life favorite.

Blueberry Oatmeal Muffins

Gluten-Free Blueberry Oat Muffins

Ingredients
  1. 1/2 c vanilla yogurt
  2. 1/2 c milk
  3. 1 c old fashion oats (gluten-free)
  4. 1/2 c brown sugar
  5. 1/4 c unsalted butter, melted
  6. 1 egg
  7. 1/2 t baking soda
  8. 1/2 t salt
  9. 1 t baking powder
  10. 1 c oat flour (gluten-free)
  11. 1/4 c flax meal
  12. 1 c fresh or frozen blueberries
Instructions
  1. Preheat oven to 375. Line 1 dozen muffin cups with parchment.
  2. Whisk together yogurt and milk. Stir in oats; set aside.
  3. Beat together sugar, butter, and egg.
  4. Stir in dry ingredients.
  5. Fold in oat mixture and berries.
  6. Spoon into lined muffin cups. Bake 20-25 minutes.

Motivating a Young Reader

Dear Sis,

Today at breakfast Josh was commenting on how well one of the kids in Little’s class can read.  I was quick to assure him that Little can read well, but he has to want to read, to read well. Make reading fun, I advised Josh. “Yeah, like cake!” Little chimed in.

Neither of them expected me to react in such a literal way. Tonight after dinner, Little had to read our dessert before anyone could eat it.

Marriage License

Dear Sis,

We finally did it! Nate managed to take a day of work this Monday, and we went to the Beaver County Court House for our Marriage License. I can pick up the paperwork this Thursday.

Instead of traditional table decorations, we placed adult coloring pages at each seat and scattered colored pencils and bright pencil sharpeners in the center of the tables like runners. We got a lot of compliments on this idea and nearly everyone colored at least a bit of their page.

Chicken & Biscuit Casserole

Dear Sis,

My extreme sense of smell inexplicably linked to my gag refer has melted away with other first trimester woes. So I can COOK again! However, I have limit time on my feet, so I am back to my old habit of simple casseroles. 

Chicken & Biscuit Casserole is a comfort dish similar to Chicken & Dumplings or Chicken Pot Pie, only easier to make:)

Chicken Biscuit Casserole

Chicken & Biscuit Casserole

Ingredients
  1. 2 (10.5) oz cans cream of mushroom soup
  2. 3/4 c milk
  3. 1 t ground pepper
  4. 1 t thyme
  5. 1 c broccoli, frozen
  6. 1 c carrots, frozen
  7. 1 c sweet corn, frozen
  8. 1 c peas, frozen
  9. 2 c chicken, cooked & shredded
  10. 8 frozen biscuits
Instructions
  1. Preheat oven to 400.
  2. Cream together soup, milk, and spices. Fold in vegetables and chicken. Pour into a 9x13 baking dish. Bake 20 minutes.
  3. Top with biscuits (2 rows of 4). Bake an additional 30 minutes, until biscuits are golden and baked through.
