Wine & Cheese Hike/Picnic Date

Dear Sis, 

This past Christmas I gifted Josh one date for each month. Life happens, so most of our dates haven’t exactly occurred on time.

Bedroom Set

Hey Sis,

Nate and I are feeling super spoiled right now. For our wedding gift, Nate’s mother and stepfather bought us a bedroom furniture set, complete with a bed frame and headboard, two Nightstands and dresser for each of us! Yep, we are very spoiled!

Last weekend, all four of us went furniture shopping together. We got into the car and drove for about an hour to Wayside furniture store, and browsed. Just when I thought we finished and saw everything in the store, the sales assistant said, “would you like to see the next building?”… twice! The place was huge, and I Nate and I were a bit overwhelmed with choices. We knew what we didn’t want. No cushioned fabric headboard, no foot board to kick in our sleep, nothing that would try to kill our toes if we cut a tight corner around the bed, and something in the cherry color. Yes, Nate and I both liked a deeper cherry. 

After we left Wayside, we took a few photos of the ones we liked the most. And decided to drive down to Andreas. Andreas was a bit further away, and we were getting very hungry. So, we stopped at an Amish restaurant. The line was huge. Nate’s step father and I eyed the line thinking… is there anything else nearby? But, the food was very good! Nate got a pie sampler platter and had fun tasting peanut butter, cherry and apple pie. He couldn’t finish, and I told him as his life helper, I would take care of the rest. 🙂

We went through all the pictures and measurements, and determined we had a tie. We liked one set from Andreas, and one from Wayside. Eeep. How did we decide? Well, we found out the set from Wayside was made out of real cherry wood instead of particle board. Problem solved, we were ordering that one. Boy are we glad we did, it is  beautiful!

I know you have got your eyes on our bright pink carpet! Because Nate and I are super sweet… if you really want it, we would be happy to give it to you? 😉 We are getting rid of that eyesore (actually the whole room used to be painted pink with a rose wallpaper border) after we potty train our future puppy!

With new pretty Nightstands, the last thing I wanted to do was ruin the finishing.  And because Nate and I both like to have water nearby, I made some coasters. I wanted them to match the bedroom comforter set, as well as look great on the cherry wood.  So, I went through that cotton yarn stash that you left me. (You know sis, I have practically every color, but cream and white in there hehehe)

The Pattern 

Materials:

Up to 4 colors of cotton worsted yarn

G sized hook

Directions:

Chain 4, slip stitch into first chain to create a loop.

Row 1: Chain 2 (counts as first dc), dc 12 times in loop, slip stich to top of chain 2. Cut off color. (Total 13 stitches)

Row 2: Chain 1 (counts as first sc) sc in stitch, 2sc in every stitch around. Slip stitch to top of chain. Cut off color. (Total 26 sc stitches)

Row 3: Chain 1 (counts as first hdc) dc in stitch, *1 hdc, 2 hdc* repeat from * to * until complete.  Slip stitch to top of chain. (Total 40 hdc)

Row 4: Chain 1(counts as first slip stitch) *1hdc, dc and tr in same stitch, tr and dc in next stitch, hdc, slip stitch* repeat from * to * until around. Slip into chain 1 to close round. You will have 8 petals. Cut off color.

Row 5: Start row on a slip stitch that is between the petals of the previous row. Ch1, (counts as first slip stitch) *sc, hdc, hdc and dc in same stitch, dc and hdc in next stitch, hdc, sc, slip stitch*repeat from * to * until around. Slip into ch1 to close round. You will have 8 petals. Cut of color.

Weave in tails and you are done!!

Waffles

Hey sis,

You know how much I like waffles! Well, Nate likes them too. So, that gives me an extra reason to pull out my new fancy flip over Belgian Waffle maker from Sharon! I’ve been hankering to use it all week, but never seem to have the time in the mornings. Perhaps, I should drag myself out of bed sooner. But, in the morning 5:40 seems plenty early to get out of bed, even if I don’t have much time in the kitchen. (My sleepy self rationalizes that everyone can eat cereal) lol.  

But not today, today I made waffles.

Jamie's Waffles
A soft and thick waffle. Leave cook a little longer and add some water to the recipe if you like a crisper waffle.

Ingredients
  1. 1 1/2 cup flour
  2. 1/2 teaspoon salt
  3. 1 teaspoon baking powder
  4. 1/2 cup sugar
  5. 4 tablespoons melted butter
  6. 1/4 cup vanilla Greek yogurt
  7. 2 eggs
  8. 1/2 cup milk
  9. 1/2 teaspoon vanilla extract
Instructions
  1. Mix all dry ingredients in a bowl.
  2. Add wet and stir.
Notes
  1. Batter is very thick, but can easily be scooped and poured. If you want a crisper waffle, add a bit of water.

Nesting

Dear Sis,

This week I’ve been minimizing, reorganizing, and cleaning to make get ready for baby and his stuff. My favorite accomplishment is my lovely new craft closet.

My very favorite bit… having my paper crafting supplies so well organized. Until now, my storage has been everything thrown into one tote. After all the card making I’ve done in the past few years, this reorganization was overdue.

Chili – Mac and Cream of Potato Soup

Hey sis,

Tonight, I introduced Nate to one of my favorite childhood meals. Mommy’s recipes (which, she gave me at the bridal shower on the recipe cards you sent out) for Chili – Mac and Cream of Potato Soup. Mom always makes these two soups together, and they are an excellent pairing. However, they are also very good alone.

Ingredients
  1. 3/4 to 1 lb of ground meat
  2. onion
  3. 1 tablespoon garlic
  4. 1 can beef broth
  5. 1 can tomato soup
  6. 1 can kidney beans
  7. 1 cup elbow- mac noodles
  8. 1 T white vinegar
Instructions
  1. In large skillet, brown meat, onion and garlic. Add remaining ingredients and simmer for 30 min.

Ingredients
  1. 4 cups chopped potatoes
  2. 1 1/4 teaspoon salt
  3. black pepper
  4. 4 tablespoons butter
  5. 4 tablespoons flour
  6. 3 cups milk
  7. onion
Instructions
  1. In thick stockpot, melt butter. Saute potatoes and onion. Add salt, pepper, flour and milk. Stir over medium heat until thickened.
Notes
  1. Use a thicker based stockpot to prevent the burning of milk.
  2. Cut the potatoes into bite sized pieces. Cook them in butter until onions are translucent.
  3. To prevent clumping, gradually sprinkle the flour and stir it in.

Birthday Cookies

Dear Sis,

You should have seen Nate opening up your birthday gift! He was sure surprised and smiley.  For the next few days, I got asked for cookies. So, on Friday night (D&D night with friends) I baked up some cookies. Nate had eaten six before we got to the party, after that I lost count. hehehe

Happy Birthday Nate

Hey Sis,

Nate’s birthday was this past week, and I wanted to cerebrate with a tasty Birthday dinner! Nate loves to try different foods. So, I decided to try something completely different for his special day… fondue. 

The Appetizer

Swiss Cheese Fondue

Ingredients
  1. 3/4 Cup milk
  2. 16 oz shredded Swiss cheese
  3. 3 Tablespoons flour
  4. 3/4 Cup dry white wine
  5. dash of pepper, nutmeg, and paprika
Instructions
  1. Add milk to pot, and warm to 200 degrees F. Bring to a simmer.
  2. Add cheese and flour, stir till melted
  3. Warm wine, and then add to fondue pot
  4. Turn dial to warm & sprinkle with spices
Notes
  1. A good recipe, but it is missing something. Maybe, it needs another type of cheese added.

For the cheese sauce, we had fresh apples, grapes, bread and walnuts for dipping.

For the main course, we had a very tasty Beef broth

Oriental Beef Broth Fondue

Ingredients
  1. 14.5 oz beef broth
  2. 1/4 cup soy sauce
  3. 1/4 cup sherry
  4. 1/2 teaspoon chili powder
  5. 1 teaspoon garlic, minced
  6. 1/2 teaspoon ground ginger
  7. 1/2 teaspoon onion powder
  8. 1 tablespoon Chives
Instructions
  1. Combine ingredients, and add to pot.
  2. Heat to 350, and bring to a boil before cooking foods
Notes
  1. Water will steam out of your pot. So, keep a cup of hot water on the side, to add more to your broth mixture.

 For dipping, we had fresh mushrooms, broccoli, cauliflower, cubed chicken, and cubed beef.

For dessert, I made one of Nate’s all time favorite recipes, Cherry Pie! This recipe came from Nate’s mom (whom got it from a common Betty Crocker cookbook). It is truly fantastic, and has replace my other cherry pie recipe.

Cherry Pie Recipe

1) In a medium sized bowl, stir together 1 1/3 cups sugar, 1/3 cup flour and 1/2 teaspoon cinnamon.2) Make or use a pre-made double pie crust. To prevent the crust from bubbling, stab bottom of crust with a fork.3) Drain two cans of tart cherries, and add to dry mixture. Also, add 1 teaspoon almond extract. Stir, until completely mixed. 4) Add top crust. Crimp edges by hand, or smash together with a fork.5) Bake at 425 for 35 – 45 minutes. A crust edge protector is recommended.

Cherry Pie

Ingredients
  1. Refrigerated Double Pie Crust
  2. 2 (14.5 oz) cans tart cherries in water, drained
  3. 1 1/3 c granulated sugar
  4. 1/3 c unbleached flour
  5. 1 t almond extract
  6. 1/2 t cinnamon
Instructions
  1. Preheat oven 425. Press one crust into a pie plate. Pierce to vent.
  2. Combine cherries and remaining ingredients. Pour into prepared crust. Top with second crust. Crimp edged together and pierce to vent.
  3. Bake 35 - 45 minutes. Shielding crust edges, if needed.

  6. 1 qt bag or jar
Instructions
  1. Whisk together ingredients and place in quart bag or jar. Label with preparation instructions.
Preparation Instructions
  1. Preheat waffle iron.
  2. Beat 1 3/4 c milk, 1/4 c melted butter, 2 eggs, and 1 t vanilla into 2 c Waffle Mix.
  3. Cook according to manufacturer's instruction, greasing iron as needed. Makes 8-10.
