An Easy and Tasty Sheet Pan Dinner

Hi Sis,

I got this easy and yummy meal from Nate’s mom, who prepared a basket full of recipes with food… for busy days or just fun cooking! This was the first one we made, and even Nate went back for seconds! I am thinking it would be a good moving meal for when Mom and I come to visit and help you unpack.

Pesto Chicken

  1. 4 Small Chicken Breasts
  2. 4 Tablespoons Sour Cream
  3. 4 Tablespoons Pesto
  4. 4 Tablespoons Parmesan or Mozzarella
  5. 1/2 Cup Bread Crumbs
  6. 1/2 Cup Parmesan
  7. 1 egg, whisked
  1. Preheat Oven to 370. Flatten each breast and put filling down the middle of each breast. Roll and use tooth picks to hold. (Filling is Sour Cream, Pesto and Parmesan).
  2. Dunk in Egg wash
  3. Roll in bread crumbs and parmesan cheese mixture
  4. Bake about 30 - 35 min
  1. For the rest of the sheet pan I tossed potatoes and a bag of frozen green beans with olive oil, garlic, salt and pepper, and some savory, marjoram and parsley.

Christmas Gifts

Hi sis,

I made most of my christmas gifts this year… minus your mugs. I started this summer when Nate and I went berry picking, so we could give away jams and jellies. I also had enough energy this weekend (with Carmin visiting) to make some of my candies, but didn’t go crazy like previous years.

Mommy asked for a headband and gloves. I had some very pretty purple wool and had just enought to make this winter set for her. The headband and gloves are from drops design, and the other is a bow tie neck warmer.

I made Melissa a headband too. It was a pretty fair isle pattern on raverly for free
