An Easy and Tasty Sheet Pan Dinner

Hi Sis,

I got this easy and yummy meal from Nate’s mom, who prepared a basket full of recipes with food… for busy days or just fun cooking! This was the first one we made, and even Nate went back for seconds! I am thinking it would be a good moving meal for when Mom and I come to visit and help you unpack.

Pesto Chicken

Ingredients
  1. 4 Small Chicken Breasts
  2. 4 Tablespoons Sour Cream
  3. 4 Tablespoons Pesto
  4. 4 Tablespoons Parmesan or Mozzarella
  5. 1/2 Cup Bread Crumbs
  6. 1/2 Cup Parmesan
  7. 1 egg, whisked
Instructions
  1. Preheat Oven to 370. Flatten each breast and put filling down the middle of each breast. Roll and use tooth picks to hold. (Filling is Sour Cream, Pesto and Parmesan).
  2. Dunk in Egg wash
  3. Roll in bread crumbs and parmesan cheese mixture
  4. Bake about 30 - 35 min
Notes
  1. For the rest of the sheet pan I tossed potatoes and a bag of frozen green beans with olive oil, garlic, salt and pepper, and some savory, marjoram and parsley.
