I got this easy and yummy meal from Nate’s mom, who prepared a basket full of recipes with food… for busy days or just fun cooking! This was the first one we made, and even Nate went back for seconds! I am thinking it would be a good moving meal for when Mom and I come to visit and help you unpack.
- 4 Small Chicken Breasts
- 4 Tablespoons Sour Cream
- 4 Tablespoons Pesto
- 4 Tablespoons Parmesan or Mozzarella
- 1/2 Cup Bread Crumbs
- 1/2 Cup Parmesan
- 1 egg, whisked
- Preheat Oven to 370. Flatten each breast and put filling down the middle of each breast. Roll and use tooth picks to hold. (Filling is Sour Cream, Pesto and Parmesan).
- Dunk in Egg wash
- Roll in bread crumbs and parmesan cheese mixture
- Bake about 30 - 35 min
- For the rest of the sheet pan I tossed potatoes and a bag of frozen green beans with olive oil, garlic, salt and pepper, and some savory, marjoram and parsley.
