Banana Blondies

Dear Sis,

Today, we had just one over-ripe banana. I only have recipes for two or three, so we tried something new. 

Banana Blondies

Ingredients
  1. 1 banana, mashed
  2. 1/2 c unsalted butter, melted
  3. 1 c dark brown sugar, packed
  4. 1 egg, beaten
  5. 1 t vanilla extract
  6. 1/4 t salt
  7. 1 c unbleached flour
Instructions
  1. Preheat oven to 350. Grease and flour a square baking pan.
  2. Place banana in a batter bowl and mash with a whisk until smooth.
  3. Beat in remaining ingredients in the order they appear.
  4. Pour batter into prepared pan. Bake 20 minutes or until toothpick comes out clean.

Lemon Shortbread

Dear Sis,

William and I decided to bake cookies today. We tried something new because we had a bag of fresh lemons on the counter.

Ingredients
  1. 2/3 c granulated sugar
  2. zest of 2 lemons
  3. 2 c unbleached flour
  4. 1 c cold unsalted butter, cubed
  5. 1/2 t salt
  6. 1/4 t baking soda
  7. 1/3 c heavy cream
  8. 1 T vanilla bean paste
Instructions
  1. Preheat oven to 350.
  2. Work sugar and zest together until well distributed and fragrant. Stir in dry ingredients.
  3. Cut in cold butter until crumbly. A stand mixer can do the work quickly.
  4. Make a well in the crumbly mixture, and mix in cream and vanilla paste by hand until dough forms.
  5. On a floured surface, press dough to 1/2 inch thickness. Cut into 1 inch squares (for smaller cookies) 1x2 inch rectangles (for larger cookies). Use a turner to transfer from rolling surface to baking sheets. Space 2 inches apart and bake 10-12 minutes. Cool on pan a few minutes before removing to cooling racks.

Mint Chocolate Chip Cookies

Dear Sis,

Today we made cookies so we could take them to the concert in the park later today. Sadly it got rained out, so we played for the duration instead.

Ingredients
  1. 1 c unsalted butter, softened
  2. 1 1/2 c sugar
  3. 2 eggs
  4. 1 1/2 t peppermint extract
  5. green food color
  6. 3 c unbleached flour
  7. 2 t baking powder
  8. 2 t cream of tartar
  9. 1 t baking soda
  10. 1/4 t salt
  11. 1 c mini semi-sweet chocolate chips
  12. 1 c Andes Creme de Menthe baking chips
Instructions
  1. Preheat oven to 350. Line baking sheets with parchment.
  2. Cream together butter and sugar until fluffy. Beat in eggs, one at a time. Beat in extract and color as desired.
  3. Whisk together dry ingredients in a separate bowl. Beat dry ingredients into peppermint mixture. Stir in baking chips.
  4. Bake spoonfuls of dough on prepared sheets 10 minutes. Cool on baking sheets a few minutes before removing to wire racks to cool completely. Store airtight.
