Lime Pound Cake

Dear Sis,

Today we visited Aunt Angel and Cousin Charity. Cousin Charity turns 15 next week, so we made a special cake. She requested a lime or raspberry dessert for the occasion. I haven’t made a bundt cake in so long, this recipe felt like a good choice:)

Lime Pound Cake

Ingredients
  1. 3 c granulated sugar
  2. 1 c unsalted butter, soft
  3. 6 eggs
  4. 1 c whole milk
  5. 1/2 c sour cream
  6. 1/4 c lime juice
  7. 1 t fresh lime zest
  8. 1 t vanilla extract
  9. 1/4 t salt
  10. 1 t baking powder
  11. 3 c unbleached flour
Glaze
  1. 1 1/2 c powdered sugar
  2. 3 T lime juice
  3. 1 t vanilla extract
  4. remaining lime zest
Instructions
  1. Preheat oven to 325. Grease and flour a bundt pan.
  2. Beat together sugar and butter until fluffy. Beat in one egg at a time. Beat in milk, sour cream, lime juice and zest, and vanilla.
  3. Stir in flour, baking powder, and flour until well combined. Pour into prepared baking pan.
  4. Bake 1 hour and 15-20 minutes until cake tester come out with moist crumbs, but not batter. Cool 10 minutes in pan before turning out onto a cooling rack. Cool completely.
  5. For glaze, beat juice and vanilla into powdered sugar. Drizzle over cake and sprinkle with remaining zest. Stand in the open air until glaze sets to the touch. Store airtight.

Apple Coffee Cake

Dear Sis,

This morning we made Apple Coffee Cake for the second time within a week, the first one, we used someone else’s recipe and it turned out way too dry, especially when it cooled! Luckily, we knew what the recipe needed to be perfect… and now it is:)

Apple Coffee Cake

Crumble
  1. 1 c dark brown sugar
  2. 1 c unbleached flour
  3. 1/2 c salted butter, melted
  4. 2 t ground cinnamon
  5. 1/2 t ground allspice
  6. 1/2 t ground cloves
Cake
  1. 2 c chopped apple
  2. 1/2 c sour cream
  3. 1/3 c granulated sugar
  4. 1/4 c unsalted butter, soft
  5. 1 egg
  6. 1/2 t vanilla extract
  7. 1/4 t baking soda
  8. 1/4 t salt
  9. 1 t baking powder
  10. 1 c unbleached flour
Instructions
  1. Preheat oven to 350. Grease and flour a square baking pan.
  2. For crumble, lightly mix all ingredients together. Chunks are good in this case.
  3. Wash, peel, core, and chop apples to prepare 2 c chopped apple.
  4. For cake, cream together sour cream, sugar, butter, egg, and vanilla.
  5. Whisk together dry ingredients, then stir into creamed mixture.
  6. Spread 1/2 cake batter in prepared baking pan. Sprinkle with 1 c crumble. Evenly spread apples over crumble. Sprinkle with 1 c crumble again. Spread remaining cake batter over apple and crumble. Top with remaining crumble.
  7. Bake approximately 45 minutes, or until a toothpick comes out clean.
  8. Cool at least 15 minutes before serving. When cooled completely, cover leftover cake with plastic wrap.

While the cake was in the oven, William scrambled his own eggs and cooked them too.

While he waited for the cake to cool, he read books in the reading tent just like the littles used to:)

Apple Spice Sheet Cake

Dear Sis,

I have a love-hate relationship with this recipe! I love that it serves a crowd, is packed with wonderful fall flavors, and that is has a link to our family history. I wish the cake were a bit thicker, but I’m afraid that will make it too heavy. I wish the frosting didn’t melt so easily, but the caramel flavor is amazing and the recipe is that of Josh’s Great Grandfather, so I want to keep as true to it as possible:)

Apple Spice Sheet Cake with Caramel Glaze

Ingredients
  1. 1 c unbleached flour
  2. 1 c cake flour
  3. 1/2 c dark brown sugar
  4. 1/2 c granulated sugar
  5. 1 1/2 t pumpkin pie spice blend
  6. 1 t baking powder
  7. 1/2 t baking soda
  8. 1/4 t salt
  9. 1 c buttermilk
  10. 1 c unsalted butter
  11. 1/2 c water
  12. 2 eggs
  13. 1 t vanilla
  14. 2 c apple, cored, peeled, and chopped
Caramel Glaze
  1. 1 c brown sugar
  2. 1/2 c salted butter
  3. 1/4 c heavy cream
  4. 1 1/2 - 2 c powdered sugar
Instructions
  1. Preheat oven to 400. Grease and flour 1/2 sheet cake pan.
  2. Place dry ingredients in a bowl and whisk to combine.
  3. Heat buttermilk, butter, and water in a heavy bottom stock pot over medium-high heat. Bring to a boil. Remove from heat.
  4. Beat in eggs and vanilla. Fold in apples.
  5. Pour into prepared pan. Bake 18-20 minutes. Cool completely before glazing.
Caramel Glaze
  1. Melt butter in a saucepan over medium heat.
  2. Add brown sugar and cream, stirring until sugar is dissolved.
  3. Stir in powdered sugar 1/2 cup at a time until desired consistency is reached. More sugar makes a more stable glaze, but it is also sweeter. I opt for less sugar and chill mine to keep the glaze from soaking into the cake too much as it sits.
