Pineapple Cream Cheese Dessert

Ingredients
  1. 1 1/4 c graham cracker crumbs, about 8 crackers
  2. 1/4 c butter or ghee, melted
  3. 6 oz Neufchatel or cream cheese
  4. 1/2 c crushed pineapple, drained
  5. 1/3 c powdered sugar
  6. 1/2 (8 oz tub) whipped topping, thawed
Instructions
  1. Combine 1 c crumbs and melted butter. Press into a loaf pan.
  2. Cream together cheese, pineapple, sugar, and whipped topping. Spread over crust.
  3. Sprinkle with remaining crumbs. Chill 4 hours before serving.

Homemade Graham Crackers

Dear Sis,

Making graham crackers has been on my to do list for weeks. I finally made time this morning.  The dessert I want to make for dinner tonight has a graham cracker crust, which is a good motivator:)

Honey Graham Crackers

Ingredients
  1. 2 c graham flour
  2. 1 t baking soda
  3. 1 t pumpkin pie spice
  4. 1/2 t salt
  5. 1 t vanilla
  6. 1 T molasses
  7. 1/4 c honey
  8. 1/2 c unsalted butter, cold
Instructions
  1. Combine dry ingredients. Work in vanilla, molasses, honey, and cold butter, until dough forms a ball.
  2. Roll dough out on a floured surface to 1/8 inch thick. Cut out. Place on ungreased baking sheets. Vent and score as desired. Chill 30 minutes.
  3. Preheat oven to 350. Bake 8 minutes. Rotate sheets. Bake 8 minutes more. Remove and cool completely on wire racks.
Notes
  1. Makes 2 dozen.

Winter Solstice Recipe Test Four

Dear Sis,

Today I tried Beef & Scallion Stir Fry.  This dish features and sweet salty sauce. Whereas, Beef & Broccoli Stir Fry had the ginger sriracha kick to it.  Both were very delicious and would be great to serve to guests. I guess we can make a final decision between the two when the rest of the menu is finished.  Then, our choice will be most compatible with the other buffet options.

Beef & Scallion Stir Fry

Beef & Scallion Stir Fry

Marinate 10 minutes
  1. 1/2 lb. beef tenderloin, sliced
  2. 1 t cornstarch
  3. 1 t sherry
  4. 1 t soy sauce
Ingredients
  1. 1 T butter or ghee
  2. 1/2 onion, sliced
  3. 3 stalks green onion, chopped
  4. 2 T soy sauce
  5. 1 T brown sugar
  6. 1 T garlic, minced
  7. 2 t oyster sauce
  8. 1 t sesame oil
  9. 1/4 t pepper
Instructions
  1. Heat butter in a wok over medium heat. Sauté onion slices.
  2. Add marinated beef and cook until browned.
  3. Stir in green onion, soy sauce, sugar, garlic, oyster sauce, sesame oil, and pepper. Cook just until greens wilt.
  4. Serve over a bed of rice. Garnish with additional green onion.

Josh’s Ribbed Socks

Dear Sis,

I finished… 11 weeks after the wedding!  So much for a rehearsal dinner gift, but Josh proudly wears them now:)

Ribbed Socks III

Mens Ribbed Sock

Materials

2 (50 gram) skeins sock weight yarn

US 1 double pointed knitting needles

US B crochet hook

Cuff

Cast on 72, with long tail method (24-24-24).

Working in the round, stitch 4 inch K2, P2 ribbing.

Stitch 5 more inches in K6, P2 diluted ribbing.

Ribbed Socks

Heel Flap

Divide stitches between 2 needles (36-36).

Work one needle as follows:

Row 1: Slip 1, K1 across; turn (36).

Row 2: Slip 1, P35; turn.

Work 30 rows; alternating between Rows 1 and 2. Finish with a right side row.

Heel Turn

Row 1: Slip 1, P20, P2tog, P1; turn.

Row 2: Slip 1 Pwise, K7, SSK, K1; turn.

Work until 22 stitches remain, alternating between Rows 1 and 2 and taking cake to P 1 additional stitch each progression just before the P2tog reduction.

Ribbed Socks II

Gusset

Pick up 15 stitches on each side of the Heel Flap. Divid Heel Turn stitches in half between two needles both side of Heel Flap needles (26-36-26).

Row 1: K24, K2tog, diluted ribbing over 36 stitches, Slip 1, K1, SSK, K24.

Row 2: K23, K2tog, diluted ribbing over 36 stitches, Slip 1, K2, SSK, K23.

Continue until 72 stitches remain (18-36-18).

Stitch around until 2 inches shorter than desired length (K18-diluted ribbing36-K18).

Toe

Row 1: K14, K2tog, K2 – K2, SSK, K28, SSK, K2 – K2, K2tog, K14.

Row 2: K13, K2tog, K2 – K2, SSK, K26, SSK, K2 – K2, K2tog, K13.

Continue until 24 stitches remain (6-12-6)

Bind Off

Divide stitches between 2 needles (12-12). Knitting as needed to get yarn to one side.  Starting with the two stitches closest to the yarn, using a crochet hook, slip stitch through 1 set of parallel stitches at a time, until all 12 pairs are securely bound. Weave in ends.

Thanksgiving Cookies

Dear Sis,

Josh and I are leaving for Oklahoma City first thing in the morning.  We are having Thanksgiving at Aunt Lee and Uncle Kens house.  When I called Aunt Lee this morning, she said the only thing she would not have time to make was cookies.  She told the right person:)  I made cookies all afternoon while Josh was a work.  I hope it is a festive assortment that will be crowd pleasing:)

Chocolate Chip Cookies

Ingredients
  1. 1 c shortening
  2. 3/4 c brown sugar
  3. 3/4 c sugar
  4. 2 eggs
  5. 2 t vanilla
  6. 1/2 t butter flavor
  7. 1 t baking soda
  8. 1 t salt
  9. 2 1/2 c flour
  10. 2 c milk chocolate chips
Instructions
  1. Preheat oven to 350.
  2. Cream together shortening and sugars. Beat in eggs, one at a time, vanilla, and butter flavor.
  3. Combine dry ingredients. Beat into creamed mixture 1/2 c at a time. Fold in chocolate chips.
  4. Drop spoonfuls onto baking sheets. Bake 9 minutes.
Notes
  1. Makes 5 dozen.

Ingredients
  1. 1 c dry cranberries
  2. 1 c golden raisins
  3. 1 c regular raisins
  4. 1 c butter
  5. 1 c sugar
  6. 2 eggs
  7. 2 T molasses
  8. 1 T maple syrup
  9. 1 T vanilla
  10. 1/2 t salt
  11. 1 t baking soda
  12. 1 T pumpkin pie spice
  13. 1 1/2 c flour
  14. 3 c old fashion oats.
Instructions
  1. Preheat oven to 350.
  2. Soak dry fruit in hot water for 10 minutes; drain and set aside.
  3. Cream together butter and sugar. Beat in eggs, one at a time, molasses, syrup, and vanilla.
  4. Combine dry ingredients. Stir into creamed mixture 1/2 c at a time.
  5. Fold in oats. Fold in softened fruit.
  6. Drop spoonfuls onto baking sheets. Bake 8-10 minutes.

  1. 1 1/2 c + powdered sugar
  2. 3/4 c salted butter
  3. 3 oz cream cheese
  4. 1 egg, beaten
  5. 1 t almond extract
  6. 1 t vanilla bean paste
  7. 2 1/2 t baking powder
  8. 2 c unbleached flour
  9. 1 c pecans, crushed
Instructions
  1. Preheat oven to 350.
  2. Cream together butter, cheese, and 1 1/2 c powdered sugar. Beat in egg, almond extract, and vanilla bean paste.
  3. Combine dry ingredients. Beat into creamed mixture. Fold in pecans.
  4. Shape into 1 inch balls. Bake 12 - 15 minutes. Cool to luke warm. Coat in powdered sugar.

  4. Fold in cinnamon chips. Drop spoonfuls on baking sheets. Bake 10-12 minutes.

Winter Solstice Recipe Test Three

Dear Sis,
We have a winner… and a loser, but that is another story! Josh likes Sweet & Sour Chicken better, but he insists on calling it barbecue, which isn’t the effect I was hoping for.  The orange chicken is a winner in my book. With you’re okay, I’ll add it to our menu.

Ingredients
  1. 3 chicken breasts, cubed
  2. 1 c chicken stock
  3. 1/2 c brown sugar
  4. 1/4 c soy sauce
  5. 1/4 c white rice vinegar
  6. 1 orange, zest & juice
  7. 1 T garlic, minced
  8. 1 t ginger paste
  9. 1/4 t pepper
  10. 2 T butter or ghee
  11. 2 eggs, beaten
  12. 1 c + 2 T cornstarch, divided
  13. 2 T water
  14. green onions, chopped
Instructions
  1. Make marinate, by Combining stock, sugar, soy sauce, vinegar, orange zest and juice, garlic, ginger paste, and pepper. Marinate chicken in 3/4 c marinate for 30 minutes.
  2. Heat butter in a wok over med heat. Drain chicken. Dip in egg and 1 c cornstarch. Panfry until golden and cooked through.
  3. Place marinate in a saucepan. Bring to a boil. Dissolve 2 T cornstarch in water. Stir into marinate and cook until thick. Pour over fried chicken.
  4. Serve on a bed of rice and garnish with green onions.

Quirkle

After supper, we played Qwirkle. I lost.  Josh decided to assure that I knew I lost, by singing “I’m number one!” “You’re number two!” I finally got him to stop by hugging him and refusing to let go until the song ended:)

P.S. I got my Texas driver’s license today… after waiting for two and a half hours! …So my plane ticket, to come see you, is good.  We took a gamble putting my new last name on the ticket, when we didn’t have the new license yet.  Close call!

My entire row of chicken coops in the back blew over today. ( 8 10×10 pens) I started taking it apart tonight, but there is much more to do. Thankfully, none of the chickens are hurt or homeless.

Dinner for Lunch

Dear Sis,

Josh has to work tonight and I had a dinner planned that I knew he would love, so I made it for lunch, so he wouldn’t miss it! As expected, he liked it, but what I didn’t expect, is that he would love it!!! He complimented with “this is good” or “wow” every couple of bites.  He even asked if I took some pictures to make Jamiegoof jealous.

Chicken with Mushrooms & Cream

Ingredients
  1. 4 chicken tenderloins
  2. 1 T lemon juice
  3. 1/2 t rosemary
  4. 1/2 t thyme
  5. 1/2 t salt and pepper
  6. 5 T butter or ghee
  7. 1 shallot, minced
  8. 6 baby bella mushrooms, chopped
  9. 1/4 c chicken stock
  10. 1/4 c white cooking wine
  11. 1 c heavy cream
  12. 2 t tapioca starch
Instructions
  1. Marinate chicken in lemon juice and spices in a 9x13 dish; stand 10 minutes.
  2. Preheat oven to 400.
  3. In a saucepan over med heat, melt butter. Saute shallot and mushrooms. Pour over chicken. Cover with foil. Bake 20 - 30 minutes.
  4. Place baked chicken on a dinner plate and cover with foil.
  5. Make sauce over med heat by combining pan drippings, stock, and wine. Bring to a boil. Add cream and return to a boil. Stir in tapioca starch and stir until thick.
  6. Serve chicken on a bed of rice with a ladle of sauce.

Ingredients
  1. 1/2 lb. baby carrots, halved lengthwise
  2. 1/2 c chicken stock
  3. 1 t brown sugar
  4. 1/4 t salt
  5. 1/4 c dry cranberries
  6. 1 T butter or honey
  7. 1 t parsley
  8. 1/4 t pepper
Instructions
  1. Boil carrots, stock, brown sugar, and salt in a saucepan over med heat. Reduce to a simmer; cook covered 5 minutes.
  2. Uncover and add cranberries, butter, and honey. Simmer until liquid is reduced to about 2 T. Stir in parsley and pepper just before serving.
