Easy Egg Breakfast

Dear Sis,

This morning we made our eggs in the microwave to save time:) We only had 15 minutes before Carter and Jenn would arrive for our play date. We managed to squeeze in breakfast!

Microwave Egg Breakfast

Ingredients
  1. 1 t oil
  2. 1 egg
  3. 1 t water
  4. dash of garlic powder
  5. dash of pepper
  6. 3 T shredded cheese
  7. half an English muffin, toasted
  8. 1 t butter
  9. 1 T salsa (optional)
Instructions
  1. Grease a mug, ramekin, or shallow bowl.
  2. Beat together egg, water, garlic powder, and pepper. Pour into prepared dish.
  3. Microwave at full power 30-45 seconds. Flip egg, add cheese, and microwave 15 seconds more.
  4. Place cooked egg on buttered English muffin half. Top with salsa if desired.

Avocado Toast

Dear Sis,

Today I tied something super fast and easy, I’ve been meaning to try for sometime… avocado toast.

Ingredients
  1. 1 slice bread, toasted and buttered
  2. 1/2 ripe avocado
  3. 1 t lime juice
  4. dash salt
  5. dash paprika
Instructions
  1. Mash together avocado, lime juice, and salt.
  2. Spread over buttered toast and dust with paprika.

Visiting Aunt Jamie

Dear Sis,

January was designated Aunt Jamie visiting month. We ended up coming a few weeks early because we had to return Grandpa Carmin, who had been marooned at our house for almost two weeks, after getting the flu during your visit the last few days of December. 

Grandpa Carmin says this picture is special because he has a head in it. Apparently he is usually a decapitated backdrop for Evelyn:)

William really enjoyed visiting the chickens. He talks about “Aunt Jamie bawk bawk” periodically. 

I got to make Evelyn’s new super soft blanket, to replace the rabbit one from our friends John and Susan, which she is rapidly outgrowing. William eagerly tested out the finished product since Evelyn was napping at the time.

We hope this new blanket fits Evelyn’s budding sophisticated luxurious ideals for a cuddly sleep aid:)

It was hard for William to say goodbye to Evelyn. He really adores his little cousin!

P.S. Even with an early start, Grandpa Jeff beat us home by just over two hours. Poor guy had to wait in a nearby parking lot! He and William watched a nature show after our steak dinner:)
