Glazed Pumpkin Cookies

Dear Sis,

Our baking addiction strikes again! We were looking for a chewy sugar cookie bursting with autumn flavor. We didn’t get what we expected. They turned out cake-y and mild! So we shock things up by adding a lovely pumpkin glaze. They look and taste perfect now:)

Glazed Pumpkin Cookies

Ingredients
  1. 1 1/2 c granulated sugar
  2. 1 c unsalted butter, soft
  3. 1/2 pumpkin puree
  4. 1 egg
  5. 2 t vanilla extract
  6. 1/2 t baking powder
  7. 1/2 t salt
  8. 1/2 t pumpkin pie spice
  9. 2 1/2 c unbleached flour
Pumpkin Glaze
  1. 3/4 c powdered sugar
  2. 1/2 c pumpkin puree
Instructions
  1. Preheat oven to 350.
  2. Cream together sugar and butter until fluffy.
  3. Beat in pumpkin, egg, and vanilla.
  4. Stir in dry ingredients.
  5. Using a cookie scoop, place balls of dough onto baking sheets. Bake 14 min.
  6. Cool completely on wire racks before frosting.
  7. For glaze, whisk together sugar and pumpkin until smooth. Apply and spread glaze with a spoon. Stand until sugar is set enough to layer cookies between parchment in an airtight container.
