Dear Sis,
Our baking addiction strikes again! We were looking for a chewy sugar cookie bursting with autumn flavor. We didn’t get what we expected. They turned out cake-y and mild! So we shock things up by adding a lovely pumpkin glaze. They look and taste perfect now:)
Glazed Pumpkin Cookies

Ingredients
- 1 1/2 c granulated sugar
- 1 c unsalted butter, soft
- 1/2 pumpkin puree
- 1 egg
- 2 t vanilla extract
- 1/2 t baking powder
- 1/2 t salt
- 1/2 t pumpkin pie spice
- 2 1/2 c unbleached flour
Pumpkin Glaze
- 3/4 c powdered sugar
- 1/2 c pumpkin puree
Instructions
- Preheat oven to 350.
- Cream together sugar and butter until fluffy.
- Beat in pumpkin, egg, and vanilla.
- Stir in dry ingredients.
- Using a cookie scoop, place balls of dough onto baking sheets. Bake 14 min.
- Cool completely on wire racks before frosting.
- For glaze, whisk together sugar and pumpkin until smooth. Apply and spread glaze with a spoon. Stand until sugar is set enough to layer cookies between parchment in an airtight container.
