Cranberry Orange Walnut Bread

Dear Sis,

I found 6 cups of cranberries in our freezer. With the move just weeks away, I am working hard to clear it out! I decided to make an old Thanksgiving favorite. It will work nicely has a holiday gift for library teachers and neighbors.

Cranberry Orange Walnut Bread

Ingredients
  1. 1 c granulated sugar
  2. 2/4 c orange juice
  3. 2 T avocado oil
  4. 1 egg, beaten
  5. zest of one orange
  6. 2 t vanilla bean paste
  7. 2 c unbleached flour
  8. 2 t pumpkin pie spice
  9. 1 1/2 t baking powder
  10. 1 t table salt
  11. 1/2 t baking soda
  12. 1 1/2 c cranberries
  13. 1/2 c crushed walnuts
Instructions
  1. Preheat oven to 350. Grease and flour loaf pans.
  2. Beat together sugar, juice, oil, egg, zest, and vanilla.
  3. Combine dry ingredients. Beat into liquid mixture.
  4. Fold in berries and nuts.
  5. Pour into prepared pans. Bake approx. 30 minutes; till cake tester comes out clean.
Notes
  1. Makes 2 loaves or 4 mini loaves.
  2. Working with frozen berries increases baking time.

Mom’s Applesauce Pancakes

I posted mom’s recipe years ago on The Lost Month post, but I didn’t put a picture or a recipe card, so I’m fixing that now:)

This recipe is very much baby approved!!! …just as it was one of our favorites growing up.

Mom's Applesauce Pancakes

Ingredients
  1. 1 c milk
  2. 1/2 c applesauce
  3. 1 egg
  4. 2 t oil
  5. 1/4 t salt
  6. 2 t baking powder
  7. 1 c flour
Instructions
  1. Whisk together wet ingredients.
  2. Beat in dry ingredients.
  3. Panfry in butter or ghee.

Visiting Nashville Family

Ingredients
  1. 1 lb. breakfast sausage
  2. 3 c biscuit mix (such as bisquick)
  3. 2 c shredded cheddar cheese
Instructions
  1. Preheat oven to 350.
  2. Combine all ingredients. Roll into balls. Place on cookie sheets.
  3. Bake 10 - 15 minutes.

  1. * Gluten free baking mix substitutes well in this recipe.

Uncle Jim and Aunt Stephanie came over around lunch time to grill chickens and make ice cream. While the food was grilling/churning, we had a kitchen full of music.

Then Great Aunt Ginny and Great Uncle Kelly popped in for a visit!

Like you, Great Aunt Ginny and Great Uncle Kelly have to be home to feed the animals, so they left before dinner. Before they left, they offered to take Mr. Baby off our hands if he became too troublesome:) 

Aunt Steph's Butter Pecan Ice Cream

Ingredients
  1. 3 T butter
  2. 3 T sugar
  3. 3/4 c pecans, chopped
  4. 4 eggs, beaten
  5. 1 1/2 c sugar
  6. 1 1/2 T vanilla
  7. 1/2 can sweetened condensed milk
  8. 1 quart heavy whipping cream
Instructions
  1. Melt butter over medium heat. Stir in sugar until dissolved. Stir in nuts and simmer stirring until golden. Pour over a buttered sheet and stand until set.
  2. Beat together eggs, sugar, vanilla, milk, and cream. Place in an ice cream maker and process according to manufacturer instructions.
  3. Crumble pecan brittle and fold into ice cream. Place in an airtight container and store in the freezer.

  1. 1 1/4 c granulated sugar
  2. 1/2 c brown sugar
  3. 1 (15 oz) can pumpkin puree
  4. 3/4 c avocado oil
  5. 3 eggs
  6. 1/4 c water
  7. 1 T vanilla
  8. 1/2 t baking powder
  9. 1/2 t salt
  10. 3/4 t cloves
  11. 1 t baking soda
  12. 2 t cinnamon
  13. 3 T brewers yeast
  14. 1/4 c flax meal
  15. 1 1/2 c unbleached flour
  16. 2 c old fashion oats
Instructions
  1. Preheat oven to 350. Grease and flour 3 loaf pans or 6 mini loaf pans.
  2. Beat together sugars, pumpkin, oil, eggs, and vanilla.
  3. Combine dry ingredients. Stir into pumpkin mixture.
  4. Pour into prepared pans. Bake 45-55 minutes for loaves or 25-35 for mini loaves.

Great Grandma’s Zucchini Bread

Dear Sis,

Baby has had me chasing all kinds of odd cravings over the past two weeks. This one developed when I was in the produce section at the grocery store. My eyes glanced over the zucchini, while I was rounding up the items on my shopping list… and POW! Zucchini bread POPPED into my head.

  1. 3 c zucchini, shredded
  2. 2 c granulated sugar
  3. 1 1/2 c oil
  4. 3 eggs, beaten
  5. 1 t vanilla
  6. 1/2 t baking soda
  7. 1/2 t salt

  9. 1 1/2 t cinnamon
  10. 3 c unbleached flour
  11. 1 c walnuts, crushed
Instructions
  1. Preheat oven to 350. Grease and flour 2 loaf pans or 5 mini loaf pans.
  2. Beat together zucchini, sugar, oil, eggs, and vanilla.
  3. Combine dry ingredients and stir into zucchini mixture.
  4. Fold in walnuts. Pour batter between prepared pans.
  5. Bake standard loaves 35-45 minutes or mini loaves

Waffles

Hey sis,

You know how much I like waffles! Well, Nate likes them too. So, that gives me an extra reason to pull out my new fancy flip over Belgian Waffle maker from Sharon! I’ve been hankering to use it all week, but never seem to have the time in the mornings. Perhaps, I should drag myself out of bed sooner. But, in the morning 5:40 seems plenty early to get out of bed, even if I don’t have much time in the kitchen. (My sleepy self rationalizes that everyone can eat cereal) lol.  

But not today, today I made waffles.

Jamie's Waffles
A soft and thick waffle. Leave cook a little longer and add some water to the recipe if you like a crisper waffle.

Ingredients
  1. 1 1/2 cup flour
  2. 1/2 teaspoon salt
  3. 1 teaspoon baking powder
  4. 1/2 cup sugar
  5. 4 tablespoons melted butter
  6. 1/4 cup vanilla Greek yogurt
  7. 2 eggs
  8. 1/2 cup milk
  9. 1/2 teaspoon vanilla extract
Instructions
  1. Mix all dry ingredients in a bowl.
  2. Add wet and stir.
Notes
  1. Batter is very thick, but can easily be scooped and poured. If you want a crisper waffle, add a bit of water.

  6. 1 qt bag or jar
Instructions
  1. Whisk together ingredients and place in quart bag or jar. Label with preparation instructions.
Preparation Instructions
  1. Preheat waffle iron.
  2. Beat 1 3/4 c milk, 1/4 c melted butter, 2 eggs, and 1 t vanilla into 2 c Waffle Mix.
  3. Cook according to manufacturer's instruction, greasing iron as needed. Makes 8-10.

Gluten-Free Blueberry Oat Muffins

Ingredients
  1. 1/2 c vanilla yogurt
  2. 1/2 c milk
  3. 1 c old fashion oats (gluten-free)
  4. 1/2 c brown sugar
  5. 1/4 c unsalted butter, melted
  6. 1 egg
  7. 1/2 t baking soda
  8. 1/2 t salt
  9. 1 t baking powder
  10. 1 c oat flour (gluten-free)
  11. 1/4 c flax meal
  12. 1 c fresh or frozen blueberries
Instructions
  1. Preheat oven to 375. Line 1 dozen muffin cups with parchment.
  2. Whisk together yogurt and milk. Stir in oats; set aside.
  3. Beat together sugar, butter, and egg.
  4. Stir in dry ingredients.
  5. Fold in oat mixture and berries.
  6. Spoon into lined muffin cups. Bake 20-25 minutes.
