Aunt Cil’s Cookie Pudding

Dear Sis,

I have always enjoyed Aunt Cil’s Cookie Pudding. I’m not sure what took me so long to try making it. It’s not hard.

Ingredients
  1. 1 pkg. chocolate sandwich cookies
  2. 1 large box vanilla instant pudding
  3. 3 cups whole milk
  4. 8 oz pkg. cream cheese, softened
  5. 1/3 c powdered sugar
  6. 8 oz tub whipped topping, thawed
Instructions
  1. 1. Set aside some cookies for top, if desired. Place the rest of the cookies in a gallon bag and crush. My kids love to do it with their feet:)
  2. 2. In a bowl, whisk milk into instant pudding mix until smooth. Stand until set.
  3. 3. In another bowl, cream together cheese and powdered sugar.
  4. 4. Stir pudding into cream cheese mixture.
  5. 5. Fold in whipped topping and 3/4 of the cookie crumbs.
  6. 6. Spread into serving dish. Top with remaining crumbs and whole cookies.

Cinnamon Cheesecake Dip

Dear Sis,

Today during nap time I enjoyed the last of the leftover Cinnamon Cheesecake dip we served during William’s party.

Ingredients
  1. 1 (8 oz) pkg. cream cheese, softened
  2. 1/2 (8 oz) tub whipped topping, thawed
  3. 1 (5 oz) cup vanilla Greek yogurt
  4. 1/4 c brown sugar
  5. 2 t cinnamon
Instructions
  1. Beat all ingredients together.
  2. Chill until ready to serve.
  3. Serve with apple sliced and graham cracker sticks.

Banana Pudding Blondie Bars

Josh is a big fan! I didn’t love them at first, but we had them four nights in a row, and they grew on me too:)

Banana Pudding Blondie Bars
Serves 9

Blondie Crust
  1. 1/2 c unsalted butter, melted
  2. 1/2 c dark brown sugar
  3. 1/2 banana, pureed
  4. 1 egg yolk, beaten
  5. 1 t vanilla extract
  6. 1/4 t salt
  7. 1/2 c unbleached flour
Pudding Layer
  1. 2 (8 oz) pkg. cream cheese, soft
  2. 1/2 c granulated sugar
  3. 1 (3.4 oz) box instant banana pudding
  4. 1/2 c whole milk
  5. 1 t vanilla extract
  6. 2/3 c heavy whipping cream
Garnish
  1. banana slices
  2. mini Nilla wafers
  3. whipped cream
Blondie Crust
  1. Preheat oven to 350. Line a square baking pan with parchment.
  2. Whisk together crust ingredients, one at a time, stirring between additions.
  3. Spread batter into prepared pan and bake 15-20 minutes until a toothpick comes out clean.
  4. Cool completely before adding pudding layer.
Pudding Layer
  1. With a hand mixer, beat cream cheese until smooth. Beat in sugar until smooth. Add pudding mix, milk and vanilla, and beat again until smooth.
  2. In a separate dish, beat whipping cream until stiff peaks form.
  3. Using a rubber spatula, fold into pudding mixture. Spread over blondie crust and chill until set.

Mint Chocolate Chip Cheesecake Brownies

Dear Sis,

After winning an awesome prize through the summer reading program, we decided to make a special treat to thank the library staff. 

Mint Chocolate Chip Cheesecake Brownies

Ingredients
  1. 1 box brownie mix
  2. 8 oz cream cheese, soft
  3. 1/4 c granulated sugar
  4. 1 egg, beaten
  5. 1/2 t peppermint extract
  6. green food coloring
  7. 1/4 c mini semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350. Line a 9x13 inch baking pan with parchment.
  2. Prepare brownie mix according to package instructions and pour into prepared pan.
  3. Beat together cream cheese, sugar, egg, peppermint extract, and food coloring until smooth. Spoon over brownie mixture. Swirl with a toothpick. Top with chocolate chips. Bake 25 - 28 minutes.
  4. Cool to room temperature. Chill completely before cutting into bars and serving.
