Fun at the Park

Hi Sis,

Fran (our neighbor) and I, enjoy going on walks together around the neighborhood, and have talked about going to local parks. This time we did it. We drove to one of the covered bridge parks and went for a walk to the river. Evelyn, loved it!

The delicious red raspberries Fran brought her made the walk even sweeter.

New Sandbox

Dear Sis,

Daddy and William have been digging out the space under the play set for a few days. Today they went to the hardware store after lunch. William napped when they got home, giving Daddy time to line the box and fill it with sand. He spent the rest of the afternoon like this:

Goodbye Great Grandpa Quick

Hi Sis,

This past week has been difficult for many of us. Nate’s grandfather (Evelyn’s Great Grandpa Quick) passed away on Monday, one week before his 80th birthday.  He was a kindhearted person, that you couldn’t help but to love and feel comfortable with right away! He sure had a knack with the kids, Evelyn always seemed to be smiling at her Great-Grandpa when they were together. We sure are going to miss him!

Potluck

Dear Sis,

We joined the Trenton Historical Society last summer. Tonight we went to a potluck dinner. Most members are retirees, so its like a room full of friendly grandparents. William loved all the attention! They were even sweet enough to have a dish of beef along side the pulled-pork entree.

We Brought:

Chicken Salad Apple Rings

Egg Salad Tea Sandwiches

Pineapple Mandarine Sunshine Cake

Ingredients
  1. 1 dozen eggs, hard boiled
  2. 1/3 c mayonaise
  3. 1/4 c shredded carrot
  4. 1/4 c snipped fresh dill
  5. 1/4 c minced red onion
  6. 2 T dijon mustard
  7. 1 t cider vinegar
  8. 1 t paprika
  9. 1 t poppy seeds
  10. 1 loaf pumpernickel cocktail bread
  11. 1/4 c julienne radishes
  12. fresh dill sprigs
Instructions
  1. Peel and mash eggs.
  2. Stir in mayo, carrot, snipped dill, red onion, mustard, vinegar, paprika, and poppy seeds. Chill.
  3. Place heaping spoonfuls of egg salad on each piece of cocktail bread.
  4. Garnish with julienned radishes and sprigs of dill.

Father’s Day Gift

Dear Sis,

At the grocery store today William pointed out the fruit-by-the-foot. I asked if he wanted to get some for Daddy for Father’s Day. He thought that was good. When I asked how many, he gave the answer he always gives… five:) 

After dinner, we made a card to go with our silly gift. I chose the sentiment, but William chose the font and colors of each line.

To my surprise, William pick brown card stock. I expected him to grab a super bright color:) We cut and pasted our sentiment inside the card. Then, I asked how he wanted to decorate his card. His response? Sprinkles!

I wrote with the glue. He sprinkled… and ate… sprinkles!

Creamy Cauliflower Soup

Dear Sis,

Today we had leftovers for lunch when we got back from family story/craft time at the library. William had the rest of the creamy cauliflower soup we made yesterday when Mama Jen, Carter, and Brother Zach came to play.

Creamy Cauliflower Soup
Serves 8

Ingredients
  1. 1/2 c butter, divided
  2. 4 stalks celery, diced
  3. 2 carrots, peeled & shredded
  4. 1 onion, chopped
  5. 4 c water
  6. 1 head cauliflower, cut in florets
  7. 1/2 c unbleached flour
  8. 4 c whole milk
  9. 4 oz cream cheese
  10. 1 c shape cheddar, shredded
  11. salt and pepper to taste
Instructions
  1. Saute celery, carrot, and onion, in 2 T butter, in a stock pot until soft.
  2. Add water and cauliflower. Cover and simmer 15 minutes until cauliflower is soft.
  3. In a saucepan, melt remaining 6 T butter. Stir in flour to make a roux. Add milk gradually, stirring as it cooks. Stir in cream cheese until melted. Stir in cheddar until melted. Remove from heat.
  4. Mash cauliflower into small bits with a potato masher. Stir in cheese sauce. Season to taste.
Notes
  1. Goes well with crackers.
  2. Leftovers can be frozen.

Gifts for Evelyn

Dear Sis,

We finally rounded up a present for Evelyn’s party in a few weeks! Since it’s only her first and she won’t really get the present process, I decided to get her lots of practical things. 

William saw me taking pictures and decided he needed his picture taken too. He is very excited about his first tattoo. We got it at the library yesterday from at the space program.

Can’t wait to visit you guys for Evelyn’s Birthday!

Outer Space and Ice Cream

Dear Sis,

Today we went to the library for a special kids program. The Planetarium had an inflatable dome to project a movie about space for kids. William got a kick out of it. Afterward, he said he didn’t want to go home. We’d already had lunch so we went to get ice cream before coming home for nap time.

William had his favorite. Vanilla ice cream, with chocolate cookie crumbs, chocolate sauce, and candy worms. I had the strawberry shortcake sundae:)
