New Farm Animals

Dear Sis,

Today after nap time William got another package. This one was from Amazon. William had filled a chore/potty sticker chart a few days before and he decided he would like some farm animals as his reward. We found a great toy barn at the annual yard sales this year for $1.00. He has been using it as a parking garage for his matchbox cars, but has been asking for animals for a while. I kept telling him he’d have to do more chores and use the potty. Yes, I’m that Mom!

I reheated Cheeseburger Soup for dinner and I finally remembered to take a picture so I can share the recipe:)

Cheeseburger Soup

Ingredients
  1. 1 lb. lean ground beef
  2. 1 t ground pepper
  3. 1 t salt
  4. 1 t garlic powder
  5. 1 t Italian seasoning
  6. 4 T butter, divided
  7. 1 onion, chopped
  8. 3 stalks celery, diced
  9. 3 carrots, peeled & grated
  10. 1 T garlic, minced
  11. 3 c chicken stock
  12. 1 1/2 t basil
  13. 2 lb. potatoes, peeled & chopped
  14. 1/4 c unbleached flour
  15. 1 1/2 c whole milk
  16. 8 oz sharpe cheddar, shredded
Instructions
  1. Brown beef in a skillet with pepper, salt, garlic power, and Italian seasoning. Transfer to a stock pot.
  2. Melt 1 T butter in skillet and sauté onion, celery, carrot, and garlic until tender. Transfer to stock pot.
  3. Add stock, bail, and potatoes to stock pot. Cover and simmer 10-15 minutes, until potatoes are tender.
  4. In a saucepan, melt remaining 3 T butter. Stir in flour to make a roux. Stir in milk gradually and cook stirring until thick. Stir in cheese until melted and smooth. Pour cheese sauce into stock pot and stir until smooth.
Notes
  1. We really like fresh baked biscuits with this soup! If you don't have time for homemade, bake frozen biscuits. They are every bit as good as homemade and don't have the weird taste and texture that refrigerated biscuits do.
  2. Leftovers can be frozen.

A Package from Gran

Dear Sis,

Today after nap time, William got a package in the mail from Gran. On her recent trip to Virginia, she pick up a Harmonica for William. Kids love all things that make noise:) Plus, it will grow with him!

Father’s Day Project

Dear Sis,

Today we made some sentimental work gloves for all the grandpas as a father’s day gift.

We bought a three pack of leather work gloves at Menards for $4.99. We pulled out some blue, green, and black paint respectively. We put the paint on a paper plate and painted William’s hand with a sponge brush and then used it like a stamp on the palm of each glove. We only smudged one, which was amazing considering my stamp was attached to a wiggly 2.5 year old:)

We had a soapy water pail and a drying rag at the ready to clean our hands between stampings.

Home School Preparation

Dear Sis,

William will be starting Pre-K3 in September. He has been very enthusiastic as I make his curriculum and print and cut out the corresponding activities. We’ve even started getting his room ready. We are going to start our homeschool day there after he brushes his teeth and gets dressed. We can go straight into calendar and story time, grab out supplies from the home school shelf, and head down stairs for breakfast and lesson. 

William is very proud of his new calendar. It is a Mellissa and Doug item.

We also found a great alphabet boarder that matching him room nicely at Dollar Tree of all places:)

On our way home from the store today we stopped at a yard sale and got a shelf for all William’s Home School Supplies. 

After we cleaned off all the dust and cobwebs, and Daddy brought it upstairs for us, we loaded it up:) While I organized, William built a tower with his giant foam dice (another great Dollar Tree find).

We are getting very excited! William is all for anything that helps make him big… and he correlates school with that process!
