New Farm Animals

Dear Sis,

Today after nap time William got another package. This one was from Amazon. William had filled a chore/potty sticker chart a few days before and he decided he would like some farm animals as his reward. We found a great toy barn at the annual yard sales this year for $1.00. He has been using it as a parking garage for his matchbox cars, but has been asking for animals for a while. I kept telling him he’d have to do more chores and use the potty. Yes, I’m that Mom!

I reheated Cheeseburger Soup for dinner and I finally remembered to take a picture so I can share the recipe:)

Cheeseburger Soup

Ingredients
  1. 1 lb. lean ground beef
  2. 1 t ground pepper
  3. 1 t salt
  4. 1 t garlic powder
  5. 1 t Italian seasoning
  6. 4 T butter, divided
  7. 1 onion, chopped
  8. 3 stalks celery, diced
  9. 3 carrots, peeled & grated
  10. 1 T garlic, minced
  11. 3 c chicken stock
  12. 1 1/2 t basil
  13. 2 lb. potatoes, peeled & chopped
  14. 1/4 c unbleached flour
  15. 1 1/2 c whole milk
  16. 8 oz sharpe cheddar, shredded
Instructions
  1. Brown beef in a skillet with pepper, salt, garlic power, and Italian seasoning. Transfer to a stock pot.
  2. Melt 1 T butter in skillet and sauté onion, celery, carrot, and garlic until tender. Transfer to stock pot.
  3. Add stock, bail, and potatoes to stock pot. Cover and simmer 10-15 minutes, until potatoes are tender.
  4. In a saucepan, melt remaining 3 T butter. Stir in flour to make a roux. Stir in milk gradually and cook stirring until thick. Stir in cheese until melted and smooth. Pour cheese sauce into stock pot and stir until smooth.
Notes
  1. We really like fresh baked biscuits with this soup! If you don't have time for homemade, bake frozen biscuits. They are every bit as good as homemade and don't have the weird taste and texture that refrigerated biscuits do.
  2. Leftovers can be frozen.

Chicken Fried Rice

Dear Sis,

Today we made homemade Chicken Fried Rice. It was better than Chinese take-out. More chicken and move veggies:) If you have any leftovers they can be frozen for later, and then thawed and reheated.

 

Chicken Fried Rice

Ingredients
  1. 2-3 T avocado oil
  2. 1/2 lb. chicken breast, diced
  3. 3 eggs, beaten
  4. 3/4 c broccoli florets, chopped
  5. 3/4 c carrot, peeled and chopped
  6. 2 t minced garlic
  7. 1/2 c frozen peas
  8. 1/4 c green onion, chopped
  9. 4 c cooked rice of choice
  10. 1/4 c low sodium soy sauce
  11. 3 T maple syrup
  12. 2 T butter, melted
  13. 1 T dried onion flakes
Instructions
  1. Panfry chicken in 1 T oil until cooked through. Season to taste with salt and pepper. Set aside.
  2. Add an additional T oil if needed and fry eggs. Set aside.
  3. Add an additional T oil if needed and sauté broccoli, carrots, and garlic until tender. Season to taste with salt and pepper. Add peas and scallions and heat through.
  4. Add rice to pan and stir until heated through. Add chicken and eggs.
  5. Combine soy sauce, syrup, butter, and onion flakes. Pour over fried rice mixture and stir until well combined.

Beet Fries

Dear Sis,

When Daddy travels for work, William and Mama make the adventurous foods. Today we made Beet Fries together. After I chopped them, William put them on the baking sheet. He also tossed them in oil and salt. His hand were all pink in the end… which he proudly showed me numerous times:)

Ingredients
  1. a bunch of beets
  2. 1-2 T avocado oil
  3. sprinkle of salt
Instructions
  1. Preheat oven to 375.
  2. Wash, remove greens, peel, and slice beets into strips.
  3. Line a jellyroll pan with foil. Toss beet strips with oil and dust with salt and spread over pan.
  4. Bake 20-30 minutes, stirring halfway through baking time.

For some reason, William called them “Fries Beet.” The kid will eat anything that looks like a french fry.

Alphabet Soup

Dear Sis,

We couldn’t find an Alphabet Soup recipe we loved, so we made our own! It is another great family meal for toddlers, kids, and parents:)

Alphabet Soup
Serves 12

Ingredients
  1. 12 oz pkg. Italian Chicken sausage, chopped
  2. 1/2 onion, chopped
  3. 1 T minced garlic
  4. 6 c chicken stock
  5. 14.5 oz can diced tomatoes
  6. 1 c pasta sauce
  7. 2 c potatoes, chopped
  8. 3 c frozen mixed vegetables
  9. 1 c Alphabet pasta, uncooked
  10. salt and pepper to taste
Instructions
  1. Heat oil in a heavy stock pot or dutch oven. Brown sausage. Add onion and garlic and sauté until translucent.
  2. Add remaining ingredients. Bring to a boil. Reduce to a simmer, cover and cook 20 minutes, or until potatoes are tender. Season to taste with salt and pepper.

Swedish Meatball Pasta

Swedish Meatball Pasta

Meatballs
  1. 1 lb. ground beef
  2. 1/2 c Italian bread crumbs
  3. 1/2 onion, chopped
  4. 1 egg
  5. 1 1/2 t pepper
  6. 1 1/2 t salt
  7. 2 T avocado oil
Pasta and Sauce
  1. 2 c beef stock
  2. 2 c milk
  3. 1 T Worcestershire
  4. 1/2 t pepper
  5. 1/2 t salt
  6. 8 oz pkg egg noodles
  7. 1 c Parmesan, shredded
  8. 1/4 c fresh parsley, chopped
Instructions
  1. Combine beef, crumbs, onion, egg, pepper, and salt until evenly mixed. Shape into 2 dozen meatballs.
  2. Heat oil in a large heavy sauté pan over medium high heat. Brown meatballs for 3 minutes, turning every minute.
  3. Add stock, milk, Worcestershire, pepper, and salt. Bring to a boil.
  4. Stir in pasta. Return to a boil, reduce to a simmer. Cook covered, stirring every few minutes, for 8 minutes, or until pasta is cooked through.
  5. Remove from heat. Stir in Parmesan and parsley.
