William’s Big Boy Room

Dear Sis,

Over the last month or so, we have been transitioning William to his own room. Josh took the bottom of the bunk bed apart so William could have the top bunk at floor level. The rail makes it a great toddler bed… and what’s more… William thinks it is great!

Now that William is spending more time in his room, I wanted to add some toy/book storage. We found a used shelf using Facebook Marketplace. We added some cube storage bins and book ends.

With the hight of the bunk bed gone, we had a lot of open wall space that looked, well, empty. So William and I got to work fixing that. We painted letters Friday and hung them this morning. William is very proud of his new space!!!

Josh Made Scones!

Dear Sis,

I woke up to the smell of baking blueberries. I thought, Josh much be making toaster waffles and I must be starving because they smell great! William and I came downstairs to these:

…and my husband standing over the stove frying eggs!!!! Josh had an irrational contempt for all things egg, so it was endearing to watch him cook one for William and then me. 

Not only did my husband make scones, but they were super yummy… even after cooling and sitting in a storage bag over night. I insisted he share the recipe, he smiled and said, “It’s a You Suck at Cooking Video.”

I watched the video so that I could have a writen copy of the recipe… it is hilarious! You Suck at Cooking: Lemon Blueberry Scones

Lemon Blueberry Scones

Ingredients
  1. 2 c unbleached flour
  2. 3 T granulated sugar
  3. 1 t baking powder
  4. 1/2 t salt
  5. 1/3 c cold unsalted butter, chopped
  6. 1 T lemon zest
  7. 1 1/2 c fresh blueberries
  8. 1 c heavy cream
Instructions
  1. Preheat oven to 400. Line a baking sheet with parchment.
  2. Whisk together dry ingredients. Cut in cold butter.
  3. Stir in zest and berries.
  4. Form a well with dry mixture. Pour in cream and gently scrap mixture around with a fork until it forms large clumps.
  5. Turn dough onto a floured surface. Knead just enough to form a rectangle that is about an inch thick. Cut into 8 wedges. Place on prepared baking sheet 2 inches apart.
  6. Bake 15-20 minutes until lightly browned. Serve warm.

Despite the sweet and entertaining nature through which this recipe came to our family. It is here to stay. This recipe is better than any scone recipe I’ve ever tried before!

Swedish Meatball Pasta

Swedish Meatball Pasta
Serves 4

Meatballs
  1. 1 lb. ground beef
  2. 1/2 c Italian bread crumbs
  3. 1/2 onion, chopped
  4. 1 egg
  5. 1 1/2 t pepper
  6. 1 1/2 t salt
  7. 2 T avocado oil
Pasta and Sauce
  1. 2 c beef stock
  2. 2 c milk
  3. 1 T Worcestershire
  4. 1/2 t pepper
  5. 1/2 t salt
  6. 8 oz pkg egg noodles
  7. 1 c Parmesan, shredded
  8. 1/4 c fresh parsley, chopped
Instructions
  1. Combine beef, crumbs, onion, egg, pepper, and salt until evenly mixed. Shape into 2 dozen meatballs.
  2. Heat oil in a large heavy sauté pan over medium high heat. Brown meatballs for 3 minutes, turning every minute.
  3. Add stock, milk, Worcestershire, pepper, and salt. Bring to a boil.
  4. Stir in pasta. Return to a boil, reduce to a simmer. Cook covered, stirring every few minutes, for 8 minutes, or until pasta is cooked through.
  5. Remove from heat. Stir in Parmesan and parsley.

Strawberry Strawberry Cake

I finally found the recipe I used to make Strawberry Strawberry Cake while Josh and I were dating. I made an icing recipe, and didn’t write it down, so I had to begin again.

Strawberry Strawberry Cake
Serves 12

Strawberry Cake
  1. 1 box white cake mix
  2. 1 - 3 oz box strawberry gelatin
  3. 1/2 c sugar
  4. 1/4 c flour
  5. 1 c avocado oil
  6. 1/2 c whole milk
  7. 4 eggs
  8. 1/2 c strawberries, diced
Strawberry Frosting
  1. 1 c strawberries, chopped
  2. 4 t lemon juice
  3. 1 c unsalted butter, softened
  4. 1 - 8 oz pkg. cream cheese, softened
  5. 2 c powdered sugar
Instructions
  1. Preheat oven to 350. Grease and flour three round cake pans.
  2. Beat together dry and wet cake ingredients until smooth. Stir in strawberries. Pour evenly between prepared pans.
  3. Bake 20 minutes. Cool 10 minutes in pans before turning onto wire racks to cool completely.
  4. To make jam, cook strawberries and lemon juice in a saucepan over medium heat. Simmer until soft and mash. When mixture thicks enough to coat stirring spoon, remove from heat and cool completely.
  5. To make frosting, beat together butter and cream cheese until fluffy. Beat in jam. Beat in sugar, 1/2 c at a time.
  6. Frost cake. Chill to set and serve.

Our Baby is One Week Old

Wow, has this week gone fast! It is amazing that our little Evelyn is already one week old. Today, I put her in her first pair of handmade tube socks! They are soo, much better then the old baby socks that I made with heels, as they actually stayed on her feet. They did shift a bit, but never completely fell off.

Fourth of July Fun

Dear Sis,

How fun that our visit over lapped the holiday. It was a busy day with fun, family, and friends! Gran, Brian, and Orville arrived around lunch time for our leftover buffet.

Gran was so happy to hold her new granddaughter for the first time!

Our family friend Orville, was excited to hold the new baby too!

William enjoyed Gran’s boyfriend, Brian’s, hat.

After lunch, Gran, Brian, and Orville set to weeding Aunt Jamie’s vegetable garden.

William got very hot and dirty helping in the garden, so he took a quick dip in Gizmo’s drinking pool.

For dinner, Grandpa Carmin made burgers and hotdogs on the grill and we had lots of fresh fruit and veggies to go with it.

Brain and Orville left after dinner, but first Brian had to get a turn holding Evelyn:)

William concluded a fun day learning all about Pop-its with Grandpa Carmin.

Happy 4th day of life on the 4th of July, Evelyn!

Welcome Home Evelyn

Dear Sis,

William, Grandpa Carmin, and I were super excited for you guys to come home from the hospital!

William enjoyed waving to his new sleeping Cousin, “Hi, baby,” he said softly over and over again.
